The iSi Injector Tips are ideal for decorating, filling food, liquid injections as well as marinating, pricking and pickling.

Use the pin nozzles exclusively with original iSi devices. They can be combined with the iSi Gourmet Whip and the iSi Thermo Whip. The nozzles are made of 100% stainless steel and are dishwasher safe.

The iSi Injector Tips set includes:

  • 1 long pin nozzle 3 mm
  • 1 long pin nozzle 5 mm
  • 1 short pin nozzle 3 mm
  • 1 short pin nozzle 5 mm
  • 4 protective covers

Tomato Foam Recipe

Tomato FoamIngredients

  • 100 ml heavy cream
  • 1 g sugar
  • 1 g salt
  • 1 g pepper
  • 100 ml vegetable stock
  • 300 g tomato(es)


Lightly cook the ripened tomatoes in the vegetable stock and puree in a blender until smooth. Add the heavy cream and season to taste with salt and pepper. Pass through the iSi funnel & sieve directly into the 0.5 L (~17 fl. oz.) iSi Whipper. Screw on 1 iSi cream charger and shake vigorously.

Serving Suggestion

Inject in small pastries and garnish with fresh basil.

Basil Emulsion Recipe

Basil Emulsion

A recipe for the very refined palate: a basil emulsion that goes with insalata caprese.


  • 1 gsalt
  • 1 gpepper
  • 200 gfresh basil
  • 100 mlvegetable oil
  • 50 gvegetable stock
  • 200 mlsoya oil
  • 5 gGlice (Texturgeber)

Heat some oil to 60 °C and stir in glice. Mix the fresh basil with the oil and finely puree in a blender. Season with salt and pepper.

Pour through the iSi Funnel & Sieve directly into a 0.5 l iSi Whipper. Screw on 1 iSi Cream Charger and shake vigorously.

Serve the Basil Emulsion on tomatoes and mozzarrella using the iSi 3 mm short Needle Tip and sprinkle with aceto balsamico.
